The Ancestral Method is a winemaking method that compared to the Charmat Method and Classic Method we could define it as the founding father of bubbles , since it is a process dating back to ancient times that maintains a naturalness lost with the new methods.
These wines that do not undergo disgorgement usually appear cloudy and have the classic smell of bread crust due to the action of the yeasts. The deposited yeasts present in the bottle make the wine special, which has depth, thickness and a strong personality.
