DESCRIPTION
A sparkling wine produced with the Champenois method with an intense aroma of ripe fruit and honey, enriched with hints of flowers and leavened bread dough. On the palate it is very broad and soft, with a savory and dry finish. Good initial acidity and marked minerality. It lends itself perfectly to accompany shellfish, seafood, sushi; it is also ideal as an aperitif.
VINIFICATION
The Classic Method comes from the symphony of two great grapes: Chardonnay and Manzoni Bianco . To protect their scents and aromas as much as possible, the berries are cooled and subsequently subjected to a soft pressing phase. The vinification involves an alcoholic fermentation in thermo-conditioned steel tanks until the March following the harvest. Then we move on to the assembly with careful refermentation on the lees for at least 36 months . Being a Brut Nature the disgorgement takes place without the addition of sugar and liqueur d'expedition.
SERVICE TEMPERATURE
We recommend serving this wine at a temperature of about 4°C – 6°C.
