VINIFICATION
After harvesting the bunches are immediately and carefully
destemmed and softly pressed with subsequent clarification of the must at temperature
controlled. 60% of the wine rests in second-use French oak barriques, while 40% in steel tanks, before being blended and bottled. A quick refinement in the bottle for a month follows.
