VINIFICATION
After harvesting the bunches are immediately and carefully
destemmed and softly pressed with subsequent clarification of the must at temperature
controlled. After a very rapid passage in third passage French oak barriques, the wine rests in steel tanks at a controlled temperature until bottling. A quick refinement in the bottle for a month follows.
